Preheat oven to 350°F. Grease a 13"x9" (or 3-quart) baking dish with extra softened butter.
In a large bowl, whisk together the rolled oats, baking powder, ground cinnamon, kosher salt, and freshly grated nutmeg.
In a medium bowl, whisk together the eggs, whole milk, honey, pure vanilla extract, and melted butter. Stir the mixture into the dry ingredients until just combined, then fold in the chopped apples and walnuts. Transfer the mixture into the prepared baking dish.
Bake in the preheated oven until the oatmeal is set and golden and the apples are tender, about 40 to 45 minutes. Let cool for about 20 minutes, then serve warm with a dollop of plain yogurt, a drizzle of honey, and a sprinkle of extra cinnamon.
