In a medium saucepan over medium heat, melt butter. Add apple, 2 tablespoons of brown sugar, and the cinnamon. Cook, stirring frequently, until apples soften and become fragrant, 2-3 minutes. Reserve 1/4 of the apples in a small bowl.

In the saucepan with remaining apples, stir in oats, salt, the remaining 1 tablespoon brown sugar, and 2 cups of water. Bring to a simmer and cook, stirring occasionally, 3-5 minutes, until the oats are softened.

To serve, divide the oatmeal between two bowls. Pour warm cream (or milk) over top, add reserved apples, and sprinkle with extra brown sugar, cinnamon, and walnuts if desired.
