Grease a 7-inch nonstick round cake pan with olive oil cooking spray. In a medium bowl, whisk together the eggs, whole milk, a generous pinch of kosher salt, and a few grinds of freshly ground black pepper until well combined.
Pour the egg mixture into the prepared pan. Evenly top the egg mixture on one half with the thawed, chopped spinach and roasted red peppers.
Carefully transfer the pan to the air fryer basket and cook at 350°F until the eggs are just set, about 6 to 8 minutes.
Remove the pan from the air fryer. Top the vegetables with crumbled goat cheese. Using a spatula, carefully fold the omelet over the filling and slide it onto a plate.
